I think I may be more excited about this sandwich than when I got 4 numbers on the lottery!! Sandwich shops definitely need to get on board with this method of making their sarnies. 3 different strips of ingredients lying across the width of one piece of bread, and another 3 strips lying across the length of another piece. Put them together, and voila - 9 little mini sandwiches:

I almost wish I went out to the office to work so I could take these in my packed lunch box. As it is, I work at home, so I’ve got no-one except my two cats to show off to come lunch time 🙁 I saw a version of the 9-combo sandwich floating around on Pinterest a few months back (consisting of ingredients like peanut butter, jam, nutella etc) and I guess it’s been milling around in the back of my brain since then. This combination jumped out at me on Saturday, and I was in the shops buying the ingredients within the hour. I can see a lot more of my time being taken up thinking of new combinations now…. It’s definitely something that needs to be thought through. My first attempt at putting this together resulted in me having bacon on one of the pieces, and pesto on another - eugh! Bacon and pesto is not good on a sandwich. Putting them next to each other on the same piece though? well there will be a tiny bit of cross-contamination, but not offensively so. I’m already starting to think of a toasted sandwich version of this with three different cheeses. ooh or maybe an ice-cream brioche sandwich version! Ahhhhh happy sandwich daydreams.
